Description
This eggplant pizza (vegan & vegetarian) recipe uses roasted eggplant slices as a healthy, gluten-free base for a veggie-packed pizza topped with spinach, garlic, onions, herbs, and melty cheese.
Ingredients
1 large eggplant
1 Tablespoon olive oil
1/2-1 cup no sugar added pizza sauce
2 garlic cloves, minced
1/2 yellow onion, sliced
1 cup fresh baby spinach
Sea salt, to taste
Ground pepper, to taste
3/4 cup shredded mozzarella cheese (or vegan alternative)
1/4 cup chopped fresh oregano
Crushed red pepper, optional
Instructions
1. Preheat the oven to 400°F.
2. Slice the eggplant lengthwise, about 1/4–1/3 inch thick.
3. Brush both sides with olive oil and season with salt and pepper.
4. Place slices on parchment-lined baking sheet and roast for 7–10 minutes.
5. Meanwhile, sauté garlic and onion in 1/2 Tablespoon olive oil until soft.
6. Add pizza sauce and spinach to the skillet, cook until spinach wilts.
7. Remove eggplant from oven and top with sautéed mixture.
8. Sprinkle with mozzarella and fresh oregano.
9. Return to oven and bake for another 5 minutes, or until cheese melts.
10. Serve immediately with more oregano and optional crushed red pepper.
Notes
You can use your favorite store-bought no-sugar-added pizza sauce or homemade.
Add vegan Beef sausage or plant-based protein if desired.
To make it 100% vegan, use plant-based cheese alternatives.
