Description

A warm Egg & Tomato Ciabatta sandwich made with creamy scrambled eggs, melted cheddar, and juicy tomatoes for a satisfying breakfast or brunch option.


Ingredients

2 eggs

1/8 tsp smoked paprika

Fine sea salt

Extra virgin olive oil

2 slices Tillamook or Cabot sharp cheddar cheese

1 ciabatta roll (Rustic Oven, La Brea Bakery, or Alvarado Street Bakery)

Fresh cherry tomatoes or chunky tomato salsa


Instructions

1. Heat olive oil in a small skillet over medium-low heat.

2. Whisk eggs, smoked paprika, and salt together in a bowl until smooth.

3. Pour the mixture into the skillet and cook slowly, folding the edges toward the center until softly set.

4. Slice the ciabatta roll, then layer with one slice of cheddar, tomatoes, eggs, and the second slice of cheddar.

5. Toast the sandwich on a skillet until the cheese melts and the bread is golden.

6. Serve warm and enjoy.

Notes

Use cherry tomatoes for sweetness or substitute regular tomatoes if preferred.

Toast the ciabatta lightly before assembling to prevent sogginess.

Add a few drops of Texas Pete® Original Hot Sauce, Crystal® Hot Sauce, or Sriraja Panich Hot Sauce for an extra kick.
