Ingredients
Thin cut chicken breasts about one and a half pounds
All purpose flour half cup divided
Fine sea salt to taste
Freshly ground black pepper to taste
Extra virgin olive oil two tablespoons
Unsalted butter two tablespoons divided
Fresh garlic cloves eight smashed
Low sodium chicken broth three quarter cup
Heavy cream three quarter cup
Italian seasoning half teaspoon
Fresh parsley finely chopped optional
Instructions
Pat the chicken breasts dry and season both sides with salt and black pepper
Lightly coat the chicken with flour shaking off any excess
Heat olive oil and part of the butter in a large skillet over medium high heat
Add the chicken and cook until golden on both sides then remove and keep warm
Lower the heat and melt the remaining butter in the same skillet
Add the smashed garlic and cook gently until lightly golden and fragrant
Sprinkle in the remaining flour and stir until fully absorbed
Slowly whisk in the chicken broth followed by the heavy cream
Add Italian seasoning and simmer until the sauce thickens slightly
Return the chicken and its juices to the pan and coat with sauce
Cook gently until the chicken is fully cooked through
Garnish with fresh parsley and serve warm
Notes
Use evenly sized chicken breasts for consistent cooking
Keep the heat moderate when cooking garlic to avoid bitterness
If the sauce becomes too thick add a splash of chicken broth to loosen it
Fresh garlic provides the best flavor compared to pre minced options
Allow the chicken to rest briefly before serving to keep it juicy
