Ingredients
1 pound ground beef
½ onion, diced
1 red bell pepper, diced
1 can petite diced tomatoes (14.5 oz)
1 can crushed tomatoes (28 oz)
1 teaspoon minced garlic
1 tablespoon Italian Seasoning
4 cups beef broth
12 oz lasagna noodles
½ cup ricotta cheese (use alcohol-free brands like Organic Valley or Tillamook)
1 cup shredded mozzarella cheese (Tillamook or Cabot)
1 cup shredded parmesan cheese (Cabot or Tillamook)
Instructions
1. Brown the ground beef in a large skillet over medium-high heat and drain excess grease
2. Place browned beef into a 6-quart crockpot
3. Add diced onion and red bell pepper
4. Pour in crushed tomatoes and diced tomatoes
5. Add minced garlic and Italian seasoning
6. Pour in beef broth and stir to combine
7. Cover and cook on low for 6-8 hours or on high for 3-4 hours
8. Break lasagna noodles into bite-sized pieces and stir them into the soup
9. Cover and cook on high for 30-45 minutes until noodles are tender
10. Serve soup in bowls, topping with a tablespoon of ricotta, a handful of mozzarella, and shredded parmesan
11. Garnish with fresh basil or parsley if desired
Notes
Leftovers can be stored in an airtight container in the refrigerator for 5-7 days
For thicker soup, remove the lid during the last 30 minutes of cooking
