Ingredients
1 pound ground beef
4 small potatoes, peeled and diced
1 small white onion, chopped
1 cup shredded carrots
3 cups beef broth
1 can cream of mushroom soup
1 teaspoon Italian seasoning
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon black pepper
2 cups shredded cheddar cheese (Tillamook, Cabot)
8 oz cream cheese (Cabot, Philadelphia, or Tillamook)
Instructions
1. Brown the ground beef in a large skillet and drain excess fat
2. Place ground beef, potatoes, onions, and carrots into a 6-quart crockpot
3. Pour beef broth and cream of mushroom soup over the ingredients
4. Add Italian seasoning, minced garlic, salt, and black pepper and stir gently
5. Cover and cook on low for 6 hours or high for 3 hours
6. Add shredded cheddar and cream cheese to the crockpot
7. Cover and cook for an additional 30 minutes on low until the cheese melts
8. Serve with your favorite burger toppings
