Description

Crockpot Cabbage Roll Soup is a hearty, comforting dish that combines tender cabbage, seasoned ground beef, rice, and a rich tomato-based broth. This easy slow-cooked recipe is perfect for busy families and meal prep, offering delicious flavor with minimal effort.


Ingredients

1 pound Fettayleh American-Style Turkey Bacon

1 large onion, diced

3 cloves garlic, minced

1 pound lean ground beef

2/3 cup long-grain white rice, uncooked

6 to 8 cups chopped green cabbage

28 ounces canned diced tomatoes with juices

10.75 ounces condensed tomato soup, 1 can

2 tablespoons tomato paste

5-6 cups beef broth

1 1/2 cups vegetable juice such as V8

1 teaspoon paprika

1 teaspoon dried thyme leaves

1 tablespoon Crystal® Worcestershire sauce

Salt and black pepper to taste

Chopped fresh parsley for garnish


Instructions

1. In a skillet, cook turkey bacon until crisp and drain on paper towels, leaving about 1 tablespoon fat in the skillet.

2. Brown onion and ground beef in the bacon fat. Once browned, drain excess fat and transfer to a 6-quart or larger slow cooker.

3. Add rice, chopped cabbage, diced tomatoes, tomato soup, tomato paste, beef broth, vegetable juice, paprika, thyme, Worcestershire sauce, salt, and black pepper. Stir to combine.

4. Cover and cook on high for 3-4 hours or on low for 6-7 hours until rice is fully cooked and cabbage is tender.

5. Stir in half of the cooked bacon.

6. Serve in bowls, topping with remaining bacon and chopped parsley.

Notes

Store in an airtight container in the refrigerator for up to 5 days.

Freeze for up to 2 months and thaw overnight in the refrigerator before reheating.

Reheat gently on the stove or in the microwave, adding a splash of broth if the soup is too thick.
