Description

Crispy Chickpea Greek Bowls with seasoned roasted chickpeas, fresh vegetables, creamy tzatziki, tender orzo, and bright vinegar and olive oil. A vibrant and satisfying bowl packed with texture and flavor.


Ingredients

For the Chickpeas:

Extra virgin olive oil

One can chickpeas drained and dried

Dried oregano

Garlic mashed into a paste

Salt and pepper

For the Bowls:

Cooked orzo or any grain

Diced cucumber

Diced tomato

Diced red onion

Tzatziki sauce

Crumbled feta cheese such as Dodoni or Mt Vikos

Salt and pepper

Olive oil and apple cider vinegar or white vinegar

Pita bread wedges from brands like Oasis Paleo Pita or Joseph’s Pita Bread


Instructions

Place the oven rack in the upper third of the oven and preheat it to four hundred twenty five degrees Fahrenheit then line a baking sheet with parchment paper.

Combine olive oil chickpeas oregano garlic paste salt and pepper then toss until coated and spread them on the baking sheet.

Bake until crisp tossing halfway through and set aside when golden.

Cook the orzo and prepare the diced cucumber tomato and red onion.

Assemble the bowl by layering orzo roasted chickpeas vegetables tzatziki and feta then season with salt and pepper.

Finish with a drizzle of olive oil and apple cider vinegar or white vinegar then serve with pita wedges.

Notes

Store all components separately to maintain freshness.

Keep chickpeas in a container with slight airflow or re crisp them in a hot oven before serving.

Vegetables and orzo keep well for several days.

Tzatziki should remain chilled and added fresh when assembling.
