Ingredients
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut in half horizontally
1 1/2 teaspoons lemon pepper seasoning
1/2 cup chopped onion
3 garlic cloves, minced
1/3 cup chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese (use Cabot or Tillamook)
1/2 cup slivered sun-dried tomatoes
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
4 cups baby spinach
Salt and pepper to taste
Instructions
1. Place olive oil in a large skillet over medium-high heat.
2. Season chicken with lemon pepper seasoning.
3. Add chicken to the skillet and cook for 4 to 5 minutes per side, until cooked through.
4. Remove chicken from skillet and set aside.
5. Add chopped onion to skillet and cook for 3 minutes until softened.
6. Add minced garlic and cook for 1 more minute.
7. Pour in chicken broth and scrape up browned bits from the bottom of the skillet.
8. Add heavy cream and bring to a simmer for 1 minute.
9. Stir in Parmesan cheese until melted and smooth.
10. Add sun-dried tomatoes, Italian seasoning, and garlic powder.
11. Stir in spinach and cook until wilted.
12. Return chicken to skillet and spoon sauce over the top.
13. Simmer for 2–3 minutes to reheat chicken and blend flavors.
14. Taste and adjust seasoning with salt and pepper.
15. Serve with pasta, rice, or vegetables.
Notes
For best results, use freshly grated cheese from a vegetarian‑rennet brand like Cabot or Tillamook.
