Description

This Creamy Ranch Chicken Casserole with Veggies is a comforting main dish made with seared chicken breasts, a rich ranch-flavored sauce, and tender vegetables. It’s simple to prepare, family-friendly, and perfect for busy weeknights.


Ingredients

2 large boneless skinless chicken breasts

2 teaspoons Italian seasoning

Salt and pepper, to taste

2 tablespoons butter, melted

12 tablespoons olive oil

10.5 oz cream of chicken soup

1 ½ cups milk

1 cup sour cream, at room temperature

½ teaspoon onion powder

1 oz packet ranch seasoning mix

12 cups mixed vegetables (frozen or fresh)

1 cup shredded cheese (Cabot or Tillamook, optional)

2 tablespoons cooked turkey bacon crumbles, optional

Fresh parsley for garnish


Instructions

1. Slice chicken breasts into 2–3 thinner pieces. Pound to about ½ inch thickness if needed.

2. Season both sides with Italian seasoning, salt, and pepper. Brush one side with melted butter.

3. Heat olive oil in a large skillet over medium-high heat. Sear chicken in batches, 4–5 minutes per side, until golden. Remove and set aside.

4. In the same skillet, whisk together cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning. Simmer for 5 minutes until slightly thickened.

5. Add vegetables to the sauce and stir to combine.

6. Return chicken to the skillet and spoon sauce over the top. Simmer for 10 minutes, partially covered.

7. Transfer chicken and sauce mixture into a casserole dish. Top with shredded cheese if desired.

8. Bake at 375°F for 20–25 minutes, until bubbly and cheese is melted.

9. Remove from oven, garnish with parsley, and serve hot with potatoes, rice, or noodles.

Notes

Use ranch seasoning mix, not ranch dip mix.

The ranch seasoning enhances flavor without tasting like bottled ranch dressing.

Add frozen vegetables directly into the sauce without thawing.

Turkey bacon crumbles make a tasty topping.

Store leftovers in the fridge for up to 3 days or freeze for 3 months.
