Creamy Mushroom Chicken is a rich and satisfying one-pan meal made with pan-seared chicken breasts, golden mushrooms, and a savory garlic cream sauce. Perfect for quick dinners or cozy weekend meals.
Ingredients
2 large chicken breasts
Salt & pepper to taste
Flour for dredging
2 tablespoons olive oil
2 tablespoons butter
12 ounces cremini or white mushrooms, sliced
1/4 teaspoon Italian seasoning
3 cloves garlic, minced
1/2 cup chicken broth
1/2 teaspoon lemon juice
1/2 teaspoon Dijon mustard
1 cup heavy/whipping cream
Instructions
1. Cut chicken breasts in half lengthwise to make four cutlets. Season with salt and pepper, then dredge lightly in flour.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken cutlets 4-5 minutes per side until golden, then remove and set aside.
3. Add butter to the pan. Once melted, add mushrooms and Italian seasoning. Cook until mushrooms release their moisture and develop a golden sear. Remove from pan.
4. Add garlic, chicken broth, lemon juice, and Dijon mustard to the skillet. Stir and reduce for 3-4 minutes until liquid is halved.
5. Stir in heavy cream, then return chicken and mushrooms to the pan. Simmer for 5-7 minutes until chicken is cooked through and sauce thickens.
6. Taste and adjust salt and pepper. Serve hot with rice, pasta, or mashed potatoes.
Notes
To make it dairy-free, use full-fat coconut milk instead of cream.
Use gluten-free flour for dredging to make it gluten-free.
Pairs well with mashed potatoes, pasta, or steamed vegetables.
