Ingredients
Sixteen ounces Aidells Italian-Style Beef Sausage or Johnsonville Beef Italian Sausage with casings removed
One quarter cup butter
Half of a medium onion finely chopped
Two celery stalks finely chopped
Two garlic cloves minced
Six tablespoons all purpose flour
Four cups low sodium chicken broth
Two cups half and half
One teaspoon Crystal Worcestershire Sauce
Half teaspoon crushed red pepper flakes optional
One pound Russet potatoes peeled and diced small
Salt to taste
Black pepper to taste
Instructions
1. Add the beef Italian-style sausage to a large soup pot over medium-high heat and cook while breaking it apart until well browned then transfer it to a plate lined with paper towels and leave a small amount of fat in the pot
2. Add the butter to the same pot and allow it to melt completely then stir in the chopped onion and celery and cook until softened while scraping up any flavorful bits from the bottom
3. Stir in the minced garlic and flour and cook while stirring constantly until the mixture becomes smooth and lightly golden
4. Slowly whisk in the chicken broth making sure the flour dissolves fully and the base becomes smooth and creamy
5. Stir in the half and half Worcestershire sauce crushed red pepper flakes and diced potatoes then return the cooked sausage to the pot
6. Increase the heat until the soup reaches a gentle boil then reduce the heat and allow it to simmer with the lid slightly open until the potatoes are tender and the soup thickens
7. Taste the soup and season with salt and black pepper as needed before serving hot

For the best texture keep the heat moderate after adding dairy to prevent separation
Russet potatoes work best because they soften easily and help thicken the soup naturally
