Ingredients
1 cup Chobani Plain Greek Yogurt or Fage Total 2 Percent
1/2 cup Daisy Sour Cream or Organic Valley Sour Cream
1 tablespoon olive oil
1 teaspoon honey
2 tablespoons fresh lemon juice
1/2 teaspoon lemon zest
1 small garlic clove minced or grated
1/2 cup chopped fresh parsley
1 cup chopped mixed soft fresh herbs for example chives dill mint basil cilantro tarragon
1/2 teaspoon kosher salt or to taste
1/2 teaspoon freshly ground black pepper
Water or milk to thin 1 to 3 tablespoons as needed
Instructions
1. Place the Chobani or Fage Greek yogurt Daisy or Organic Valley sour cream olive oil honey lemon juice lemon zest garlic kosher salt and black pepper into a food processor
2. Add the chopped parsley and the mixed soft herbs directly to the bowl no need to prechop them finely
3. Blend until the mixture is smooth and creamy stopping to scrape down the sides with a rubber spatula as needed
4. Taste and adjust seasoning adding more salt pepper lemon juice or honey to balance flavors then pulse again to incorporate
5. If the dressing is too thick add water or milk one tablespoon at a time blending after each addition until you reach a pourable creamy consistency
6. Transfer the dressing to a three cup mason jar or any airtight container then chill for at least thirty minutes to let the flavors meld
7. Shake or stir before serving and use on salads grain bowls roasted vegetables as a sandwich spread or as a dip
Notes
Use a food processor for the creamiest texture and scrape the sides so all herbs incorporate evenly
Soft leaf herbs like parsley basil cilantro chives dill mint and tarragon blend best and give the dressing bright fresh flavor
Adjust the herb mix to taste reduce strong herbs such as tarragon or mint if you want a milder result
For extra creaminess use a slightly thicker Greek yogurt or add an additional tablespoon of olive oil
