Description
Creamy Greek Tzatziki Sauce made with grated cucumber, garlic, white vinegar, extra virgin olive oil, thick Greek yogurt, herbs, and pepper for a refreshing dip perfect for vegetables and warm pita.
Ingredients
Three fourths of an English cucumber partially peeled in stripes
Half teaspoon kosher salt for the cucumber plus another half teaspoon for mixing
Four to five garlic cloves finely grated or minced
One teaspoon Heinz Distilled White Vinegar
One tablespoon California Olive Ranch Extra Virgin Olive Oil
Two cups Chobani Plain Greek Yogurt
Two tablespoons chopped fresh dill or mint optional
One fourth teaspoon ground white pepper
Warm Papa Pita Greek Pita Flatbread for serving
Sliced vegetables for serving
Instructions
Grate the cucumber with a box grater after peeling it in striped sections then sprinkle with half a teaspoon of salt and place it into a cheesecloth or clean napkin to squeeze out as much liquid as possible
Combine the garlic with the remaining half teaspoon of salt in a bowl then stir in the white vinegar and extra virgin olive oil until fully blended
Fold the drained cucumber into the garlic mixture and mix until evenly combined
Add the Greek yogurt and blend until smooth then sprinkle in the white pepper and fresh dill or mint if desired and mix again until the texture becomes creamy
Cover the bowl and chill the mixture in the refrigerator for at least thirty minutes to thicken and allow the flavors to meld
Stir gently before serving and drizzle a small amount of olive oil on top if preferred then serve with warm pita bread and fresh vegetables
Notes
This recipe yields roughly two cups which is ideal for small families or snacking through the week
The sauce has a garlic forward flavor so the amount of garlic may be adjusted based on personal preference
Use thick Greek yogurt to maintain a smooth and creamy consistency especially after chilling
Chilling is essential because it develops flavor and helps the sauce thicken naturally
Store in a tightly sealed glass container in the refrigerator and enjoy within four days
