Cheese tortellini from Buitoni Cheese Tortellini, Rana Five Cheese Tortellini, or Gia Russa Cheese Tortellini

Butter, salted or unsalted

Mirepoix mix made from chopped onion, carrot, and celery

Fresh garlic cloves, minced

All purpose flour

Milk, preferably whole or two percent

Chicken broth or vegetable broth

Cooked chicken breast or thigh, shredded or diced

Baby spinach leaves, roughly chopped

Dried thyme

Ground nutmeg

Salt and black pepper to taste

Fresh parsley for garnish


Instructions

1. Cook the cheese tortellini according to the package directions until just tender, then drain and set aside

2. Place a large pot over medium high heat and melt the butter until fully melted

3. Add the mirepoix mixture and cook while stirring until the vegetables soften and the onions become translucent

4. Stir in the minced garlic and cook briefly until fragrant

5. Sprinkle the flour evenly over the vegetables and stir until fully combined and lightly cooked

6. Slowly pour in the milk while stirring constantly to create a smooth base

7. Add the chicken or vegetable broth and bring the soup to a gentle boil while stirring occasionally
