Ingredients
2 lbs boneless, skinless chicken breast (sliced into thin cutlets)
Salt and pepper, to taste
14 oz can artichoke hearts, drained and quartered
4.5 oz can chopped green chiles
6 oz cream cheese, softened
1/3 cup mayonnaise
1/2 tsp garlic powder
1 cup grated parmesan cheese, divided
Optional: smoked paprika or dried Italian herbs for garnish
Olive oil drizzle (optional)
Instructions
1. Preheat the oven to 400˚F (200˚C).
2. Season both sides of the chicken cutlets with salt and pepper.
3. Drain and quarter the artichoke hearts to remove excess moisture. Add chopped green chiles and set aside.
4. In a medium bowl, combine softened cream cheese, mayonnaise, garlic powder, and half of the grated parmesan cheese. Stir until smooth and creamy.
5. Fold in the prepared artichokes and green chiles to create a cohesive, flavorful mixture.
6. Arrange the seasoned chicken cutlets in a large casserole dish in a single layer.
7. Spread the creamy artichoke mixture evenly over the chicken, making sure each piece is fully covered.
8. Sprinkle the remaining parmesan cheese over the top for a golden, bubbly crust.
9. Optional: lightly sprinkle smoked paprika or Italian herbs for extra flavor.
10. Cover with foil and bake for 35–45 minutes, or until the chicken reaches an internal temperature of 165˚F.
11. For a golden finish, remove the foil during the last 10 minutes of baking.
12. Remove from the oven and let it rest for 5 minutes before serving.
