Description
A smooth and smoky chipotle sauce made with creamy dairy, bright lime, garlic and chipotle peppers in adobo. Perfect for tacos, bowls, sandwiches, grilled meats or vegetables and everyday dipping.
Ingredients
¼ cup mayonnaise
1 cup Daisy Sour Cream or Tillamook Sour Cream
2 chipotle peppers in adobo sauce
½ lime, juiced
1 garlic clove
Salt to taste
Instructions
1. Add the mayonnaise, sour cream, chipotle peppers, lime juice, garlic and salt to a food processor.
2. Blend until the mixture becomes smooth and creamy.
3. Taste the sauce and adjust the lime or salt as desired.
4. Blend again briefly if adding more seasoning or adobo sauce.
Notes
This recipe yields about 1½ cups of chipotle sauce.
Leftover sauce can be stored in an airtight container in the refrigerator for up to one week.
Freeze unused chipotle peppers in a freezer safe bag for up to three months and thaw anytime you want to make more sauce.
For a spicier version, blend in an additional half chipotle pepper.
