Description

A creamy and comforting Chicken & Swiss Chard Casserole featuring crispy bone-in chicken thighs baked in a rich garlic cream sauce with tender Swiss chard. Perfect for an easy weeknight dinner or a cozy family meal.


Ingredients

4 bone-in, skin-on chicken thighs

1 tablespoon salted butter

1 tablespoon vegetable oil

2 tablespoons butter

78 cloves garlic, smashed and roughly chopped

8 cups roughly torn Swiss chard (about 2 large bunches)

1 cup chicken broth

1/4 cup heavy cream

1/3 cup freshly grated Tillamook Shredded Parmesan Cheese or Cabot Shredded Parmesan Cheese

1/2 teaspoon lemon juice, or to taste

Salt and black pepper, to taste


Instructions

1. Preheat the oven to 400°F (200°C).

2. Melt butter and oil together in a large frying pan over medium-high heat.

3. Add chicken thighs, skin side down, and sear until the skin is golden brown and crisp.

4. Flip and brown the other side, then transfer the chicken to an 8×8-inch baking dish.

5. Drain most of the fat from the pan, leaving a thin layer for flavor.

6. Add 2 tablespoons butter to the same pan and melt over medium heat.

7. Stir in the chopped garlic and sauté for about 1 minute until fragrant.

8. Add the Swiss chard and cook until it wilts and reduces in volume.

9. Pour in the chicken broth and heavy cream, whisking until smooth.

10. Add grated Parmesan cheese and stir until the sauce thickens slightly.

11. Stir in lemon juice and season with salt and pepper to taste.

12. Pour the creamy garlic and Swiss chard sauce evenly over the chicken in the baking dish.

13. Bake for 25–30 minutes or until the internal temperature of the chicken reaches 185°F.

14. Remove from oven and let rest for 5 minutes before serving.

Notes

You can double the recipe easily for larger servings.

Serve with steamed rice, buttered noodles, or toasted bread such as Arnold®, Sara Lee®, or Dave’s Killer Bread®.

For added freshness, pair with a light salad and a squeeze of extra lemon juice before serving.

Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
