Description

Chicken & Spinach Lasagna is a creamy, flavorful dish layered with tender chicken, fresh spinach, and a blend of cheeses. This recipe is perfect for family dinners or meal prep.


Ingredients

3 tablespoons butter

2 teaspoons minced garlic

3 tablespoons flour

2 ½ cups whole milk or half-and-half

¼ cup grated Parmesan cheese (Cabot or Tillamook)

4 ounces cream cheese softened (Philadelphia or Kraft)

¾ cup ricotta cheese (Polly-O or Galbani)

1 egg

8 dried lasagna noodles cooked according to package instructions

2 cups cooked chicken, cut into bite-size pieces

2 cups shredded mozzarella cheese (Tillamook or Cabot)

¼ cup grated Parmesan cheese (Cabot or Tillamook)

4 cups baby spinach leaves


Instructions

1. Preheat oven to 400 degrees Fahrenheit and lightly oil an 8 x 8-inch baking dish

2. Melt butter in a saucepan over medium heat, then add garlic and cook briefly

3. Stir in flour and cook 30 seconds to form a roux

4. Gradually whisk in milk and simmer until thickened

5. Remove from heat and stir in Parmesan, cream cheese, and spinach until wilted

6. Whisk egg and ricotta together in a small bowl

7. Spoon ¼ cup sauce into the baking dish, then layer 2 noodles, ¼ cup ricotta mixture, 2/3 cup chicken, 2/3 cup mozzarella, 1 tablespoon Parmesan, and ½ cup sauce

8. Repeat layers twice more and top with remaining sauce and Parmesan

9. Bake uncovered for 20-25 minutes until sauce is bubbling and cheese is golden

10. Allow lasagna to rest 15-20 minutes before serving

Notes

Leftover or rotisserie chicken work well for this recipe. The lasagna can be stored in the refrigerator for 3-4 days or frozen for up to 2 months. Reheat portions in the oven or microwave until warmed through.
