Description
Enjoy a flavorful, low-carb twist on the classic Philly cheesesteak with tender chicken strips, sautéed peppers and onions, and a creamy, velvety cheese sauce over fresh zucchini noodles.
Ingredients
12 oz (340g) chicken breast or thigh, thinly sliced
1 medium (120g) onion, cut into strips
1 medium (120g) green pepper, cut into strips
2 cloves (10g) garlic, minced
2 tbsp (30g) olive oil or butter
2 medium (550g) zucchini, spiralized into zoodles
Salt and pepper, to taste
1 cup (240g) heavy cream
1/2 cup (120g) chicken broth
6 tbsp (75g) cream cheese (Cabot or Tillamook)
3/4 cup (100g) mozzarella cheese (Cabot or Tillamook)
1/2 tsp red chili flakes
3 tbsp (20g) diced hot chili (Texas Pete, Crystal, or Sriraja Panich)
3 tbsp (10g) fresh parsley, chopped
1 stalk (10g) scallion, chopped
Instructions
1. Slice chicken into 2-3 inch strips and season with salt and pepper
2. Heat olive oil or butter in a pan over medium-high heat and brown chicken; remove and set aside
3. Sauté onions, green pepper, and garlic in the same pan for 10-15 minutes until caramelized
4. Spiralize zucchini into zoodles or use store-bought zoodles
5. In a saucepan, heat heavy cream and chicken broth until bubbling
6. Gradually add cream cheese chunks, stirring until melted
7. Slowly add mozzarella cheese while stirring to create a smooth sauce
8. Add red chili flakes and simmer gently until thickened
9. Layer zucchini noodles on a plate or dish, top with sautéed vegetables and chicken
10. Pour cheese sauce evenly over the layers
11. Garnish with diced chili, parsley, and scallions
12. Let rest for a minute before serving to soften zoodles
Notes
Placing chicken in the freezer for 20 minutes makes slicing easier
Stir cheese sauce continuously to achieve a smooth, velvety texture
If sauce splits, add a splash of cream and stir on low heat
You can use traditional pasta if desired
Other cheeses may be substituted for mozzarella
Store leftovers in an airtight container in the refrigerator for up to three days
