Ingredients
6 cups shredded chicken
1 tbsp oil
4 sliced onions
1/4 cup mayonnaise
1/4 cup sour cream
2 cloves garlic, finely minced
1 tsp salt
1/2 tsp pepper
8 oz Tillamook Provolone Slices (or Cabot, Organic Valley)
Instructions
1. Preheat oven to 450°F.
2. Toss onions with oil in a large casserole dish. Bake for 25 minutes, stirring halfway through, until onions are softened and golden.
3. In a large bowl, combine shredded chicken, mayonnaise, sour cream, garlic, salt, and pepper.
4. Stir well until the chicken is evenly coated.
5. Mix the cooked onions into the chicken mixture in the casserole dish.
6. Smooth the surface evenly and top with provolone slices.
7. Reduce oven temperature to 375°F and bake for 15–20 minutes until cheese is bubbly and golden.
8. Remove from the oven and let rest for 5 minutes before serving.
