Ingredients

Boneless skinless chicken breasts diced

Salt and pepper

Olive oil

Diced yellow onion

Chopped bell peppers

Minced garlic

Low sodium chicken broth

Fire roasted tomatoes

Black beans drained and rinsed

Chili powder

Ground cumin

Instant brown rice

Fresh lime juice

Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese

Instructions

2. Heat olive oil in a skillet over medium high heat and add the chicken then season with chili powder cumin salt and pepper and cook until fully done before transferring it aside to keep warm

3. Add more olive oil to the skillet and sauté onions until softened then add bell peppers and continue cooking until tender before adding garlic for a brief sauté

4. Stir in chicken broth fire roasted tomatoes black beans remaining chili powder and cumin then bring the mixture to a steady boil

5. Add instant brown rice and fold it into the liquid then cover and cook until the rice absorbs the broth and becomes tender

6. Remove from heat and let the skillet rest then stir in the cooked chicken lime juice Tillamook Mexican blend cheese and cilantro before serving or portioning into containers
