Ingredients
1/2 cup rice vinegar or apple cider vinegar such as Bragg Organic Raw Apple Cider Vinegar or Spectrum Organic Apple Cider Vinegar
1/2 cup white sugar
2 teaspoons salt
1 tablespoon chili garlic sauce or hot sauce such as Texas Pete Original Hot Sauce Crystal Hot Sauce or Sriraja Panich Hot Sauce mixed with a touch of minced garlic
Instructions
1. Choose either rice vinegar or apple cider vinegar based on the flavor you prefer and measure 1/2 cup into a small saucepan
2. Add 1/2 cup white sugar to the vinegar and set the saucepan over medium heat stirring gently as it warms
3. Continue stirring until the sugar dissolves completely and the liquid becomes clear and smooth this prevents a grainy texture
4. Once the sugar is dissolved keep the mixture at medium heat to bring it to a gentle simmer letting flavors merge evenly
5. Add 2 teaspoons salt to balance the sweetness and stir to combine
6. Lower the heat to a gentle simmer and let the mixture reduce and thicken slightly for about five minutes stirring occasionally
7. Remove the saucepan from the heat and stir in 1 tablespoon of your chosen chili garlic sauce or hot sauce blend to add heat and aromatic depth
8. Allow the sauce to cool slightly it will thicken as it cools then taste and adjust by adding a touch more sugar for sweetness or more hot sauce for heat if desired
Notes
Use rice vinegar for a mild neutral tang or apple cider vinegar for a slightly fruity note
If the sauce seems thin after simmering it will thicken as it cools add a splash of vinegar if it becomes too thick
To create a smoother finish strain the sauce through a fine mesh sieve to remove garlic pieces
Store in a clean airtight glass jar refrigerate up to one week or freeze in small portions for longer storage
