Description
A flavorful and healthy Low-Carb Chicken & Cabbage Stir-Fry Casserole made with tender chicken, soft cabbage, and warm spices for a quick, comforting meal.
Ingredients
2 large chicken breasts, cut into bite-size pieces
1 tablespoon olive oil
1 tablespoon butter
1 medium onion, chopped
1 medium green cabbage, cored and chopped
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper, to taste
Instructions
1. Add olive oil and chicken to a skillet, season with salt and pepper, and sauté over medium-high heat for 5–7 minutes until cooked through. Transfer chicken to a paper towel-lined plate.
2. Add butter and onions to the skillet and sauté for 3 minutes until softened.
3. Add cabbage and cook uncovered for 10–15 minutes, stirring often, until soft and lightly caramelized.
4. Stir in garlic and paprika.
5. Return chicken to the pan and cook for a few more minutes until heated through. Adjust salt and pepper to taste.
6. Serve immediately.
Notes
You can use smoked paprika or hot paprika for added flavor.
A cabbage weighing about two pounds works best once the outer leaves and core are removed.
