This Chicken & Broccoli Cheddar Cauliflower Rice Bake is a creamy, cheesy, and satisfying low-carb comfort meal made with tender chicken, fresh broccoli, cauliflower rice, and a smooth cheddar cream sauce. It’s easy to prepare, packed with flavor, and perfect for family dinners or weekly meal prep.
Ingredients
1 pound chicken breast, cubed
1 onion, diced
3 cups cauliflower rice
3 cups broccoli florets
2 garlic cloves, minced
½ cup chicken broth
½ cup cream cheese
1 cup Tillamook Medium Cheddar Cheese or Cabot Sharp Cheddar Cheese, shredded
1 teaspoon paprika
1 teaspoon ground coriander
Salt and pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
1. Heat the olive oil in a large skillet over medium heat. Add the cubed chicken, onion, garlic, paprika, coriander, salt, and pepper. Cook uncovered for 5–10 minutes or until the chicken is fully cooked.
2. Add the cauliflower rice, broccoli, and chicken broth to the skillet. Cook for another 5–10 minutes until the broccoli is tender and the cauliflower rice is soft but not mushy.
3. Add the cream cheese and stir until it melts and blends into a creamy sauce.
4. Stir in half of the shredded cheddar cheese and mix well.
5. Transfer the mixture to an oven-safe baking dish. Top with the remaining cheddar cheese.
6. Place under the broiler for 2–3 minutes or bake at 400°F until the cheese is melted, golden, and bubbly.
7. Remove from the oven, garnish with chopped parsley, and serve warm.
Notes
Cut chicken evenly into small cubes to ensure consistent cooking.
Use pre-riced cauliflower to save prep time. If using frozen, thaw and drain well.
Cook broccoli just until fork-tender to maintain color and texture.
Let cream cheese soften before adding to help it melt smoothly.
If your skillet isn’t broiler-safe, transfer the mixture to a baking dish before broiling.
Add a little heat with crushed red pepper flakes or drizzle Texas Pete Original Hot Sauce, Crystal Hot Sauce, or Sriraja Panich Hot Sauce before serving.
