Description

A wholesome, creamy, and satisfying Chicken & Broccoli Cauliflower Rice Bake made with tender chicken, fluffy cauliflower rice, melted cheese, and broccoli for a hearty yet light dinner that’s easy to make and family-approved.


Ingredients

2 pounds skinless boneless chicken breasts

1 tablespoon olive oil

2 (10-ounce) bags frozen cauliflower rice (or 1 head of cauliflower, riced and cooked)

1 (16-ounce) bag frozen broccoli cuts

2 large eggs, whisked

3 cups shredded mozzarella cheese (Tillamook Mozzarella Shredded Cheese)

2 teaspoons kosher salt

2 teaspoons garlic powder

2 teaspoons onion powder

2 tablespoons unsalted butter, melted

1 cup shredded Italian blend cheese (Cabot Italian Blend Cheese)


Instructions

1. Preheat oven to 400°F. Lightly coat a 3-quart baking dish with non-stick cooking spray or olive oil and set aside.

2. Slice chicken breasts in half horizontally to make thinner pieces, coat lightly with olive oil, season with salt and pepper, and place on a baking sheet.

3. Bake chicken for 20 minutes until cooked through. Remove from oven and allow to rest for 5 minutes, then chop into bite-sized pieces.

4. Meanwhile, heat the cauliflower rice and broccoli according to package directions. Drain any excess moisture to keep the casserole from getting watery.

5. In a large bowl, combine cauliflower rice, broccoli, chicken, eggs, mozzarella cheese, salt, garlic powder, onion powder, and melted butter. Mix until evenly combined.

6. Transfer mixture to the prepared baking dish and spread evenly.

7. Top with shredded Italian blend cheese, spreading to cover the surface.

8. Bake for 50 minutes or until the cheese on top is melted, golden, and bubbling around the edges.

9. Let the casserole cool for 10 minutes before slicing and serving.

Notes

Use freshly grated cheese for the best melt and texture.

Do not overcook the broccoli or cauliflower rice; a slight bite prevents sogginess.

You can substitute cooked rotisserie chicken for convenience.

Store leftovers in airtight containers for up to 4 days in the refrigerator or freeze for up to 3 months.

Reheat individual portions in the microwave for 2–3 minutes or bake in the oven at 350°F for 15 minutes until warmed through.
