Description
A creamy, cheesy, low-carb Chicken & Broccoli Alfredo Zoodle Bake made in one skillet. It’s comforting, easy, and full of flavor.
Ingredients
3 tbsp butter, divided
2.5 lbs boneless skinless chicken breast, sliced
1/2 tsp salt
1/4 tsp pepper
2 tbsp chicken broth
12 oz steam bag of frozen broccoli
3 garlic cloves, minced
1 oz cream cheese, softened
1 cup heavy whipping cream
1/2 tsp Italian seasoning
2/3 cup Cabot or Tillamook parmesan-style cheese, grated
1/4 cup pepper jack cheese, grated
3/4 cup Sargento or Organic Valley mozzarella cheese, grated
1/4 tsp dried basil
Optional: 2 medium zucchinis, spiralized and drained
Instructions
1. Melt 1 tbsp butter in an oven-safe skillet over medium heat.
2. Season chicken slices with salt and pepper, then sear on both sides until golden.
3. Cover and cook on low until chicken is no longer pink inside. Remove from skillet and set aside.
4. Deglaze skillet with 2 tbsp chicken broth, scraping up browned bits.
5. Steam broccoli in the microwave or on the stovetop until tender. Drain thoroughly.
6. Add 2 tbsp butter and garlic to skillet. Sauté for 2 minutes until fragrant.
7. Stir in cream cheese, heavy whipping cream, and Italian seasoning. Whisk until smooth.
8. Simmer on medium-low heat until sauce thickens.
9. Add parmesan and pepper jack cheese. Stir until melted and smooth.
10. Fold in chicken and drained broccoli. Optionally add drained zucchini noodles at this point.
11. Top with mozzarella cheese and sprinkle dried basil.
12. Broil on top rack for 1-2 minutes until cheese is bubbly and golden.
13. Let rest for a few minutes before serving.
Notes
Use high-quality cheese brands like Cabot, Tillamook, Sargento, or Organic Valley for the best texture and flavor.
Drain broccoli and zoodles thoroughly to prevent watery sauce.
If sauce thickens too much, add a splash of heavy cream.
If sauce is too thin, simmer longer uncovered while whisking.
