Description
A creamy, cheesy Chicken & Asparagus Cheddar Bake made with tender chicken, fresh asparagus, and a rich sauce of goat cheese, sour cream, and sharp cheddar. Comfort food at its best, perfect for family dinners or meal prep.
Ingredients
4 large boneless skinless chicken breasts, trimmed and cut lengthwise into two pieces
2 tsp olive oil
1 tsp poultry seasoning
Salt and freshly ground black pepper to taste
1 lb fresh asparagus, trimmed and cut into 2–3 inch pieces
1 cup chicken stock
1/2 cup sour cream (Daisy Sour Cream or Tillamook Sour Cream)
3 oz soft goat cheese (the kind sold in a log)
3 tbsp Cabot Shredded Parmesan or Tillamook Aged Parmesan
1/2 cup finely grated sharp white cheddar cheese (Tillamook Sharp White Cheddar or Cabot Seriously Sharp Cheddar)
Instructions
1. Preheat oven to 375°F (190°C). Spray a rectangular casserole dish with olive oil or non-stick spray.
2. Trim chicken breasts, cut in half lengthwise, and season with poultry seasoning, salt, and pepper.
3. Heat olive oil in a large frying pan and brown chicken on both sides. Place chicken into prepared casserole dish.
4. Cut woody ends off asparagus and slice into 2–3 inch pieces. Blanch in boiling salted water for 3 minutes, then shock in ice water. Drain and pat dry.
5. Layer asparagus over the chicken in the casserole dish.
6. Deglaze frying pan with chicken stock, simmer until reduced to 3/4 cup. Lower heat, whisk in sour cream, then goat cheese and Parmesan until melted and smooth.
7. Pour sauce over chicken and asparagus, sprinkle cheddar cheese over top.
8. Bake uncovered 25–30 minutes, until cheese is melted and sauce is bubbling. Let rest 5 minutes before serving.
Notes
Blanching asparagus before baking ensures it stays crisp and vibrant in color.
Do not overbake or the sauce may separate.
This casserole can be prepared ahead and refrigerated for up to 24 hours before baking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
