Cheesy beef Pepperoni Pizza Roll-Ups are quick, low-carb, and packed with flavor. Perfect for snacks, parties, or light meals.
Ingredients
4 low-carb tortillas
1 cup shredded mozzarella cheese
16 beef pepperoni slices
½ cup pizza sauce
½ tsp Italian seasoning
Olive oil spray (optional)
Instructions
1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. Spread each tortilla with pizza sauce, leaving a ½-inch border around the edges.
3. Sprinkle Italian seasoning over the sauce, then top each with ¼ cup shredded cheese.
4. Place 4 slices of pepperoni on each tortilla.
5. Roll up each tortilla tightly and place seam-side down on the baking sheet.
6. (Optional) Spray lightly with olive oil and sprinkle with extra seasoning.
7. Bake for 8–10 minutes, or until golden and crispy.
8. Let cool slightly, slice into 4 pieces per roll-up, and serve with extra sauce for dipping.
Notes
For vegetarian version, skip beef pepperoni and use chopped veggies.
Use turkey pepperoni for a lighter alternative.
Serve with dipping sauces like marinara, ranch, or garlic aioli.
