Description
These cheesy mashed potato puffs are creamy on the inside and crispy on the outside. Made with sour cream, cheddar, and chives, they’re the perfect bite-sized comfort food for any occasion.
Ingredients
3 cups mashed potatoes
2 eggs
⅓ cup sour cream, plus more for serving
1 heaping cup sharp cheddar cheese, shredded
2 Tbsp parmesan, grated
2 Tbsp chives, chopped
Salt and black pepper to taste
Butter for greasing the pan
Instructions
1. Preheat oven to 400°F.
2. Butter 8–9 wells of a nonstick cupcake pan.
3. In a mixing bowl, whisk eggs and sour cream until smooth.
4. Add cheddar, parmesan, and chives. Mix well.
5. Fold in mashed potatoes. Season with salt and pepper.
6. Spoon mixture into pan, filling just to the top.
7. Bake for 25–35 minutes, until golden and pulling from edges.
8. Cool for 5 minutes in pan.
9. Turn out onto a platter and serve with sour cream and extra chives.
Notes
Use cold mashed potatoes for best results.
Do not overmix to keep the puffs fluffy.
Perfect for breakfast, snacks, or party appetizers.
Store leftovers in an airtight container in the fridge up to 4 days.
