Description
A creamy and cheesy low-carb chicken broccoli casserole made with tender chicken, fresh broccoli, and a rich cheese sauce. Perfect for busy weeknights or meal prep.
Ingredients
20 ounces fresh broccoli florets
8 ounces cream cheese, room temperature
1/4 cup mayonnaise
1 cup freshly grated cheddar cheese
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 cups cooked, chopped chicken
1/4 cup grated Parmesan cheese
Instructions
1. Preheat oven to 350 degrees.
2. Add broccoli to a large microwave-safe bowl with 2 tablespoons of water. Cover with plastic wrap and microwave for 2 minutes. Let sit covered for 2 minutes.
3. Carefully remove the plastic wrap and drain the liquid.
4. In a small bowl, mix cream cheese, mayonnaise, cheddar cheese, garlic powder, salt, and pepper until well combined.
5. Stir the cream cheese mixture and chicken into the steamed broccoli until everything is coated.
6. Transfer the mixture to a 9×13 baking dish and sprinkle Parmesan cheese evenly over the top.
7. Bake uncovered for 15 minutes until hot and bubbly.
Notes
Use pre-cut broccoli florets for faster prep.
Rotisserie chicken, leftover chicken, or thawed frozen grilled chicken chunks all work well.
Reheats easily for leftovers or meal prep.
