Description
This blueberry cream cheese bread is ultra-moist, rich, and loaded with juicy blueberries. Perfect for breakfast, dessert, or a satisfying snack.
Ingredients
1 cup unsalted butter, softened
8 oz cream cheese, softened
¾ cup sugar
2 teaspoons vanilla extract
4 eggs
2 cups all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
2 cups fresh blueberries, tossed in 1 tbsp flour
Instructions
1. Preheat oven to 350°F and grease two 9×5-inch loaf pans.
2. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
3. Add vanilla extract and eggs, one at a time, mixing well after each addition.
4. In a separate bowl, whisk together flour, baking powder, and salt.
5. Slowly add the dry ingredients into the wet mixture until just combined.
6. Gently fold in the floured blueberries using a spatula.
7. Divide the batter evenly between prepared loaf pans.
8. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
9. Let cool in the pans for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Make sure all ingredients are at room temperature for best results.
You can use frozen blueberries, but do not thaw them.
Store the bread in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
