Description
This blueberry banana bread recipe is moist, fluffy, and loaded with fresh berries and ripe banana flavor. A perfect treat for breakfast or snack.
Ingredients
2 cups all purpose flour
1 tablespoon flour (for coating blueberries)
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
1/4 cup butter, softened
1 cup mashed ripe bananas (about 2 bananas)
2 eggs
1/3 cup plain or vanilla yogurt
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries

Instructions
1. Preheat oven to 350°F.
2. In a medium bowl, mix flour, baking soda, and salt.
3. In a separate large bowl, beat sugar and softened butter until fluffy (about 1 minute).
4. Add mashed banana, eggs, yogurt, and vanilla extract. Beat until well combined.
5. Gradually add dry ingredients to wet mixture and mix at low speed until just moist.
6. Toss blueberries with 1 tablespoon flour to coat them.
7. Gently fold blueberries into batter.
8. Pour batter into a greased 8 1/2 x 4 1/2-inch loaf pan. Add extra blueberries on top.
9. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool in the pan for 10 minutes, then remove and place on wire rack.
11. Let cool completely before slicing.
Notes
You can substitute frozen blueberries, but expect some streaking in the batter.
For added crunch, sprinkle turbinado sugar or a streusel topping before baking.
Wrap and store at room temperature for up to 3 days or freeze for up to 2 months.
