Description

A wholesome Blueberry Baked Oatmeal recipe made with ripe bananas, blueberries, oats, and honey. It’s soft, naturally sweet, and perfect for breakfast or brunch. Enjoy warm with a touch of milk or yogurt.


Ingredients

2 medium ripe bananas, sliced into ½-inch pieces

1½ cups fresh or frozen blueberries

¼ cup honey or pure maple syrup

1 cup quick or old-fashioned oats

¼ cup chopped walnuts or pecans

½ teaspoon baking powder

¾ teaspoon ground cinnamon

Pinch of salt

1 cup milk (any dairy or plant-based milk)

1 large egg

1 teaspoon alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla Flavor or Watkins Clear Vanilla Flavor)


Instructions

1. Preheat oven to 375°F. Lightly spray an 8×8-inch or 9×9-inch ceramic baking dish with cooking spray.

2. Arrange banana slices evenly on the bottom of the dish. Sprinkle half the blueberries, ¼ teaspoon cinnamon, and drizzle 1 tablespoon honey. Cover with foil.

3. Bake for 15 minutes until the bananas soften.

4. In a bowl, combine oats, half the nuts, baking powder, remaining cinnamon, and salt.

5. In another bowl, whisk the rest of the honey, milk, egg, and alcohol-free vanilla flavor.

6. Remove the dish from the oven. Spread oat mixture evenly over bananas and blueberries.

7. Pour the milk mixture evenly over oats. Sprinkle the remaining blueberries and nuts on top.

8. Bake for about 30 minutes until the top is golden brown and the oatmeal is set.

9. Cool slightly before cutting into six pieces. Serve warm.

Notes

Use certified gluten-free oats if needed.

Any milk—dairy or plant-based—works well.

For a vegan version, replace the egg with a flax egg (1 tbsp ground flaxseed + 3 tbsp water).

Add protein powder or extra nuts for a heartier meal.

Store leftovers in the refrigerator for up to 5 days or freeze individual portions for 2 months.

Reheat in the microwave for 30–45 seconds or in the oven at 350°F for 10 minutes.

Add a splash of milk before reheating to keep it moist.
