Description
Beef & Barley Soup is a hearty, nutritious, and satisfying meal made with tender beef, pearl barley, fresh vegetables, and a rich, flavorful broth. This soup is perfect for a comforting lunch or dinner and can be easily customized with additional herbs and vegetables.
Ingredients
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, minced
2 carrots, sliced
1 rib celery, sliced
2 cups cooked beef, cubed
6 cups reduced sodium beef broth
14.5 ounces canned petite diced tomatoes with juices
½ green bell pepper, diced
⅔ cup pearl barley
1 tablespoon Crystal Worcestershire Sauce
¼ teaspoon dried thyme leaves
1 packet beef gravy mix
1 bay leaf
2 tablespoons chopped fresh parsley or 2 teaspoons dried
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened.
2. Add carrots, celery, bell pepper, cooked beef, beef broth, diced tomatoes with juices, pearl barley, Worcestershire sauce, thyme, beef gravy mix, and bay leaf. Stir to combine.
3. Bring the mixture to a boil, then reduce heat to low and simmer covered for 40–50 minutes, stirring occasionally until barley is tender and beef is fully cooked.
4. Remove bay leaf, stir in fresh parsley, and season with salt and black pepper to taste.
5. Serve hot, optionally garnished with grated Tillamook Farmstyle Fine Cut Mexican Blend Shredded Cheese or a slice of Pepperoni Beef Salami bread.
Notes
Soup may thicken as it cools. Add extra broth or water when reheating to reach the desired consistency. Leftovers store well in airtight containers in the refrigerator for up to four days or frozen for up to three months. Gently reheat to preserve texture and flavor.
