Description

Banana pancake cereal is a fun, kid-friendly twist on classic pancakes. These mini pancakes are easy to make, naturally sweetened with banana, and served like cereal with berries and honey.


Ingredients

1 cup 1% milk (or almond milk or buttermilk)

1 cup unbleached all-purpose or whole wheat flour

1 ripe banana

2 large eggs

1 teaspoon oil

1 teaspoon vanilla

2 teaspoons baking powder

1/4 teaspoon salt

Cooking spray

1 cup fresh mixed berries (for topping)

1 large banana, sliced

Optional whipped cream and colored sprinkles (for topping)


Instructions

1. Add milk, flour, 1 banana, eggs, oil, vanilla, baking powder, and salt into a blender and blend until smooth.

2. Transfer the batter into a squeeze bottle or a ziplock bag with a small cut in one corner.

3. Heat a nonstick skillet over medium-high heat and spray with cooking spray.

4. Squeeze small dots of pancake batter onto the pan, about the size of a nickel.

5. Cook until the tops dry out and small bubbles form.

6. Toss the pancakes with a spatula and cook another 1–2 minutes until golden.

7. Repeat with remaining batter.

8. Serve mini pancakes in bowls and top with sliced banana, berries, and optional whipped cream or sprinkles.

9. Drizzle with honey if desired.

Notes

Use ripe bananas for the best natural sweetness.

The batter can be made ahead and stored in the fridge for up to 2 days.

Mini pancakes can be frozen and reheated in the toaster oven or air fryer.
