Description

Soft and chewy Banana Oatmeal Bars (Freezer) made with ripe bananas, oats, and nut butter. Perfect for meal prep, quick breakfasts, and healthy snacks ready anytime.


Ingredients

1½ cups mashed ripe bananas (about 3 medium)

2 cups instant oats or rolled oats blended into flour

½ cup peanut butter (or sunflower seed or almond butter, or 2 eggs)

½ cup milk

1 teaspoon alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla Flavor or Watkins Clear Vanilla Flavor)

½ teaspoon baking powder

¼ teaspoon salt

¼ cup chocolate chips, blueberries, or dried fruit (optional)


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy lifting.

2. In a medium bowl, combine mashed bananas, oats, peanut butter, milk, vanilla flavor, baking powder, and salt. Stir until fully blended.

3. Add chocolate chips, blueberries, or dried fruit if desired.

4. Pour the mixture into the prepared pan, spreading evenly.

5. Bake for 20–22 minutes, or until the bars are firm and lightly golden at the edges.

6. Let cool completely in the pan, then lift out using the parchment and slice into bars.

Notes

Store Banana Oatmeal Bars (Freezer) in an airtight container in the fridge for up to 7 days.

For longer storage, freeze in a single layer for 1 hour, then transfer to a freezer-safe container for up to 6 months.

Use rolled oats, instant oats, or oat flour for different textures.

Substitute peanut butter with sunflower seed butter for a nut-free version.

Add ¼ cup honey or maple syrup for a sweeter taste.

Serve chilled or warm for a quick, healthy snack or breakfast.
