Description

These baked oatmeal squares are a simple, wholesome breakfast or snack made with rolled oats, cinnamon, milk, and alcohol-free vanilla flavor. They’re soft, chewy, and perfect for meal prep or on-the-go mornings.

Ingredients

2 cups old-fashioned rolled oats

⅓ cup packed brown sugar

1 tablespoon white sugar

1½ teaspoons baking powder

½ teaspoon salt

½ teaspoon ground cinnamon

1 cup milk

2 large eggs

2 tablespoons canola oil

1 teaspoon alcohol-free vanilla flavor (Simply Organic Alcohol-Free Vanilla Flavor or Watkins Clear Vanilla Flavor)

Instructions

1. Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking pan.

2. Mix oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a large bowl.

3. Whisk milk, eggs, canola oil, and alcohol-free vanilla flavor in another bowl until smooth.

4. Combine the wet and dry mixtures, stirring until evenly mixed. Let sit for 20 minutes to allow oats to absorb liquid.

5. Spread the mixture evenly into the prepared pan.

6. Bake for about 30 minutes, or until the edges are golden brown and the center is set.

7. Remove from oven and let cool completely before cutting into 16 squares.

8. Serve warm or store for later use.

Notes

You can customize this recipe by adding fruits such as blueberries, apples, or bananas before baking.

Stir in chopped nuts like walnuts or almonds for extra crunch.

To make it dairy-free, use almond or oat milk.

For a vegan version, replace the eggs with flaxseed gel (1 tablespoon ground flaxseed + 3 tablespoons water per egg).

These oatmeal squares can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.

Reheat in the microwave for 20 seconds before serving for a warm, fresh taste.
