Ingredients
4 boneless, skinless chicken breasts, sliced in half lengthwise
2 to 3 tablespoons extra-virgin olive oil
3/4 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
4 tablespoons unsalted butter
2 garlic cloves, minced
1 lemon, thinly sliced
1/4 cup freshly squeezed lemon juice
Chopped fresh parsley, for garnish
Instructions
1. Preheat oven to 350°F.
2. Pound chicken breasts to even thickness. Season both sides with salt and pepper.
3. Heat 1 tablespoon olive oil in a skillet over medium heat.
4. Dredge each chicken piece in flour, shaking off excess.
5. Sear chicken in batches for 3–4 minutes per side until golden. Transfer to a baking dish.
6. In the same skillet, melt butter over medium-low heat. Add garlic and cook for 30 seconds.
7. Add lemon slices and juice. Cook for 2–3 minutes, flipping slices once.
8. Season sauce with a pinch of salt and pepper. Pour over chicken in the baking dish.
9. Bake for 15–20 minutes or until internal temp reaches 165°F.
10. Remove from oven and let rest 5 minutes. Garnish with fresh parsley and serve.
