These apple ring pancakes combine crisp apple slices with cinnamon-spiced pancake batter, offering a deliciously fluffy and fruity breakfast twist.
Ingredients
1 apple (Honeycrisp, Fuji, or Gala recommended)
½ teaspoon cinnamon (for coating)
1 egg
2 tablespoons butter, melted
1 teaspoon vanilla extract
¾ cup milk (180 mL)
1 cup flour (125 g)
2 teaspoons baking powder
½ teaspoon cinnamon (for batter)
1 pinch salt
Butter for cooking (optional)
Optional toppings: maple syrup, Greek yogurt, fruit slices, nut butter
Instructions
1. Peel the apple and slice into ¾-inch thick rings.
2. Remove the core from each apple slice using a small spoon or corer.
3. Place the rings in a bowl and toss with ½ teaspoon cinnamon to coat.
4. In a large bowl, whisk together egg, melted butter, vanilla extract, and milk.
5. Sift in flour, baking powder, ½ teaspoon cinnamon, and a pinch of salt. Stir to form batter, leaving a few lumps.
6. Heat a skillet over medium heat and lightly butter the surface.
7. Dip each apple ring into the batter, coating it evenly.
8. Place the rings on the skillet. Cook until bubbles form on the surface.
9. Flip carefully and cook until golden brown on the second side.
10. Serve with your favorite toppings and enjoy warm.
Notes
Do not overmix the batter — a few lumps are fine.
To keep cooked pancakes warm, store them in a 200°F oven until serving.
These pancakes can be made dairy-free by substituting milk and butter with plant-based alternatives.
