Description
These baked apple fritter bites are soft, warm, and sweet, packed with finely diced Honeycrisp apples and topped with a caramelized apple cider glaze. A lighter take on the classic fairground favorite, perfect for any occasion.
Ingredients
1½ cups all-purpose flour
2 tsp baking powder
½ tsp kosher salt
2 tsp ground cinnamon
¼ cup unsalted butter, melted
¼ cup granulated sugar
1 large egg
½ tsp vanilla extract
½ cup no-sugar added applesauce
1½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
Nonstick cooking spray for greasing
Glaze:
2 cups powdered sugar
⅓ cup + 2 TBSP apple cider or apple juice
Instructions
1. Preheat oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
3. In a large bowl, whisk together melted butter and sugar. Add egg, then stir in vanilla extract and applesauce.
4. Add the dry mixture to the wet and stir until just combined. Gently fold in the diced apples.
5. Scoop 1 tablespoon of batter into mounds on the baking sheet, spacing them a few inches apart.
6. Bake for 10 minutes until set and lightly golden. Remove from oven.
7. Turn broiler to high. While it’s heating, make the glaze by whisking powdered sugar and apple cider (or juice) until smooth.
8. Brush glaze onto warm fritters, letting it drip down the sides. Broil for 2–4 minutes, rotating the sheet every minute for even caramelization.
9. Remove from oven and immediately brush remaining glaze over fritters.
10. Let set for 15 minutes until glaze firms up before serving.
Notes
Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 1 week.
Reheat in the oven at 350°F for 5–10 minutes or microwave for 15–20 seconds for best results.
